Beans Every Day, Three Times A Day
Beans were a staple in many meals for the typical civil war soldier. The soldiers ate beans more than any other vegetables - navy beans, butter beans, kidney beans, pea beans, pinto beans or wax beans.
Beans were cooked in a variety of ways. At night, the soldiers built a fire in a shallowed-out hole and let the beans cook through the night. Beans were added to soups, along with potatoes and other vegetables.

Navy Bean Soup
1 cup dried beans 6 cups water
1/2 lb salt pork 2 large carrots
1 small onion 1 large potato, cut into small pieces
pinch of salt dash of pepper
Wash beans in a large container and discard any discolored beans. Place beans in sauce[an and cover with water about 2 inches above beans. Soak beans overnight.
Drain beans in colander. Return beans to saucepan and add water. Add salt pork to beans. Remove skin from onion and chop onion. Peel and chop 2 carrots. Stir in chopped onions and chopped carrots. Bring to a boil. Cover, reduce heat, and simmer 45 minutes. Cut potatoes into 1/2 inch pieces. Add potato pieces, salt and pepper. Bring to a boil and cover. Cook 15 minutes or until potato pieces are tender
