Authentic Salads from the 1800's

Been making salads for my husband and me since his heart surgery. Found these unusual ones from the 1800's.

Butter Bean Salad

Lightly mix together one pint butter beans, one cup chopped celery, one tablespoon finely chopped onion, and one tablespoon chopped green pepper. Garnish with grated cheese and serve with French dressing.

French Dressing

Mix three teaspoons of cider vinegar with three and one half tablespoons olive oil, one large pinch of salt, and one tiny pinch black pepper and red pepper.

Spinach Salad

Chop cold, boiled spinach fine, season with salt, pepper, and a little nutmeg. Mold into small cups. Turn out lettuce leaves and garnish with hard boiled eggs sliced. Serve with a little mayonnaise.

Use lite salt and light mayonnaise.
