Authentic Alexandre Dumas Potato Salad

This recipe is from Alexandre Dumas, famous author . Two of my favorite books from him are "The Count of Monte Crisco" and "The Three Musketeers".

He also loved foods and to cook. He wrote "The Grande Dictionaire de Cuisine" which was published in 1873.

This potato salad is in that book.


Ingredients:
6 good sized new potatoes, unpeeled
2 tablespoons salt
1 teaspoon freshly ground black pepper
1/2 cup dry white wine
8 tablespoons olive oil
1 tablespoon white wine vinegar
1/2 cup chopped parsley
1/2 cup chopped green onion or chives

This became the classic French potato salad with a wine and oil marinade.
 
Looks good. I love a French potato salad, especially in the heat of the summer.

I've never tried the French version. The nearby supermarket which has German owners recently had a German week. There was different varieties of German sausages and German potato salad. I had never tried it before and it was absolutely delicious. I'm just sad that is not an item they regularly stock.

They are similar. All the German potato salad I've had is slightly sweet. French potato salad is not and usually has a fresher taste due to the fresh herbs included. Both are delicious.
 
Off-topic, but some may be interested in reading The Black Count about Dumas father's rise in the French military to the rank of General. One will learn much about French political, military, and social history in that era. Dumas was a quadroon, as his father was the offspring of a French planter and Black mother in Saint-Dominge, now Haiti. A good read.
