Chicken and Dumplings

1 chicken
1 cup flour
2 teaspoons baking powder
enough milk to make thick batter
salt and pepper to taste
sprig parsley
1 diced onion

Preparation:

Clean and cut chicken. Place it in kettle and cover with water. Add the diced onion, salt and pepper. Cook until tender.

Mix your flour, baking powder, salt and minced parsley and make to a thick batter. Drop from spoon into the boiling chicken. Cover and cook for 20 minutes.

Place chicken on platter and surround with the dumpling.

A wonderful meal. This is old recipe from my Granny's family.
 
This seems to be one of those foods that there are a thousand different variations- included items, texture of dumplings, consistency of broth, etc.

Very difficult, for me, to find a restaurant that does it "right". But like most here, I had a grandma who absolutely had it down pat.

Cracker Barrel broth is very close. Honestly, with a bit more effort, they could be in the running.

But seems every time I order (mainly because they are the cheapest thing on the menu), I always seem to get a clump of undone dough somewhere in the mix. Makes my heart hurt.

I think Cracker Barrel has dumplings as a side item too. My grandmother always made THE best dumpling. She rolled them out and cut into strips about 1" wide. They cooked evenly. Drop dumplings are sorta like hush puppies. You gota be sure they get done. Nothing worse than a bite of raw dough .
 
With the dumplings done, there are few things better on a cold western NY night. Unless you have lobster Newberg YOU didn't finish from last night.

Let it wait another night, better eat those dumplings while they're still hot.
 
Another thing about dumplings, when they get done, eat them. Because if you continue to heat or cook them, the dumplings will go away eventually.

My sister ordered Chicken and Dumplings at Cracker Barrel. When it came to the table we looked at it and each other and decided that it was the most insipid restaurant meal we had ever seen. Not a hint of colour, just white food on a white plate. A sprinkle of parsley would not have gone amiss. She said it tasted okay, but the appearance was so off-putting that she really did not enjoy. The Japanese say that you eat first with your eyes, this is a case in point!

That's what garnish is for? No wonder it always seemed wasteful to me.

Cracker Barrel food declined in quality during the pandemic and never recovered IMO. Their chicken & dumplings were always hit or miss, including the ratio of meat to dough. Too often it ends up dumplings with some chicken.
 
My mother made Chicken and Dumplings while I was growing up. We had our own chickens and she made everything from scratch. She also had drop dumplings of which imo the square ones in some recipes today are nothing but noodles. Personally, I don't like Chicken and Dumplings but just about everyone else does, I think. I love fried chicken and Mom made the best around. She is from eastern Ky. She is 95 1/2 yo and doesn't cook much any longer. But she still, occasionally, will make biscuits, gravy and eggs for her and my brother of whom she lives with in Ohio.

Sounds gooooood! I like chicken and dumplings, but my wife has never liked it. She doesn't know why, but says it stems from her childhood.

That's what black pepper is for!!
