Recreated Date Pudding

Even though many made Plum Pudding for Christmas, others made Date Pudding.

For the batter:
1 cup brown sugar
1 tbsp butter
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 cup milk
1 cup chopped dates
1/2 cup walnuts
2 cups flour
Cream together brown sugar and butter. Add milk. Blend in baking powder. Ad salt, cinnamon and flour until smooth/ Add dates and walnuts.

For bottom layer
2 cups water
1/2 cup granulated sugar
2 tbsp butter

Preheat oven to 350 degrees
Combine water. granulated sugar and butter in saucepan and bring to boil. Pour mixture into 9 x 12 inch pan and then pour batter on top.
Bake in oven for 30 minutes. Serve hot with whipped cream.

Is it like a sponge ? If so it's sounds similar to the base of a sticky toffee pudding , the toffee sauce would be poured on top of the sponge to finish the dish. It's absolutely delicious.
 
That sound good I'm like @LSBusch , I'd try it if someone else cooked it. I saw that date recipe and immediately thought of my grandmother. She always had pecan stuffed dates rolled in granulated sugar along with toasted pecans to snack on around Christmas 🎄🎄
