Since my tomatoes are now in and seem to be doing well, thought post this old recipe for scalloped tomatoes.

2 cups cooked tomatoes, mixed with tablespoon sugar
1 to 2 tablespoons butter, cut up
1 cup soft bread cubes
salt and pepper
buttered bread crumbs

Grease a baking dish. Put in about one-third of the tomatoes, dot with part of the butter, and put in half of the bread crumbs. Repeat twice, putting buttered crumbs on the top of last layer. Bake uncovered at 350 degrees ( a moderate oven) for approximately 30 minutes.

A slightly different recipe for Scalloped Tomatoes. This one is from "Old Time Recipes To Enjoy", "The Kentucky Explorer", Feb. 2017.

Peel and slice the tomatoes; have ready grated bread crumbs, seasoned with sugar, butter, cayenne pepper and salt. Place alternate layers of tomatoes and crumbs in the dish and bake for two hours.
 
This works well since the country is now enjoying the winter crop of Florida tomatoes.as a rule they start planting the new crop in south Florida starting Aug.1 thru Aug.15th.
