Hi y'all,
I recently had the pleasure of enjoying some Pimento Cornbread at one of the local Fredericksburg restaurants. The flavor and texture was excellent and something I very highly recommend. The recipe used for that particular service of Pimento Cornbread is similar to one I found online. I enjoy mine with butter on top. Pimento and cheese has always been one of my favorite combinations. It has this heavenly mouth-feel and just the right amount of spice.
Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon salt
1 tablespoon baking powder
2 eggs
1 cup milk
¼ cup mayonnaise
2-ounce jar diced pimientos, drained
8 ounces sharp Cheddar cheese, freshly grated
Butter, optional
