March 30 is Turkey Neck Soup Day. Turkey necks were cooked in America in 19th century and even before. This soup was comfort food and very nourishing.

It was good way to use left over turkey.

Turkey Neck Soup

1 lb turkey necks
2 carrots
1 yellow onion
2 potatoes
1 tablespoon salt
1 tablespoon black pepper
3 quarts of water

Cook turkey necks in water, add vegies and cook longer. Then add salt and pepper and simmer for at at least hour.
