Tomato Pudding

This is recipe for period tomato pudding. This was popular in mid to late 1800s. This is recreated recipe.

1 stick butter
2 cups bread cubes
1 10 1/2 oz. can tomato puree
1/4 cup water
1/4 teaspoon salt
1 cup light brown sugar

Melt butter. Pour over bread cubes. Toss. Heat tomato puree with water, salt and brown sugar. Simmer for 5 minutes. Pour mixture over bread cubes. Place in casserole and bake covered at 350 degrees for 45 minutes.

Serve at Thanksgiving as side with your turkey.
 
Donna. This is a very interesting recipe. My mother and father used to make this same type of "tomato soup" when my sisters and I were growing up. It was a popular soup made for us during our lunch hour and sometimes as a soup course during our dinner hour. Italians love to use bread in their soups as a thickener which is why my parents added it to the soup. This soup is very tasty and satisfying especially during the upcoming colder months. David.
