Any of you who have cooked without proper facilities well know why flapjacks were so popular with the pioneers. All you needed were a bonfire and a skillet. This is an early recipe from "West Coast Cook Book" by Helen Evans Brown.
Pioneer Flapjacks
2 cups sour milk
1 cup corn meal
2 tablespoons flour
1 egg
1 teaspoon soda
1/2 teaspoon salt
Mix 2 cups of sour milk. 1 cup of corn meal, 2 tablespoons of flour, an egg, if available, 1 teaspoon soda, and 1/2 teaspoon salt. Mix well, adding water if desired. and cook in a skillet. Honey, wild berry jam, or sugar and water syrup were usually served with them.
Note: "Paul Bunyan made his flapjacks with buttermilk from his buttermilk well and greased the griddle by having boys, with ham tied to their feet, go skating on it." "west Coast Cookbook", page 35.
