NEW YORK CHEESECAKE

A good crab cake just might be better then lobster.

To be honest: I couldn't care less!

(hahaaa, no insult meant, of course!!! It's just that I dislike one as much as the other. We spent New Year's Eve in a fine hotel on the beautiful island of Tenerife and were served a "Galadinner" then. Not one course that I could eat! All seafood!! I had looked forward to the meat course but even the meat was something like pulled pork (mmmh!) served over a bed of algae. Thank you ... Tasted fishy in every sense of the word!!! At least I did not put on a single ounce of weight on that evening.)

I love crab cakes, especially since my dad is a seafood seller! Can't really stomach fried fish.

I think I could live off cheesecake. :wink: I once had a cheesecake with sour cream on the top, instead of just mixed in, which was delicious- though strange to me at the time. I've also been trying to persuade my mom for years for my birthday dinner that bleu cheese quiche, followed by cheesecake is not too much cheese!
 
This is a real recipe from the bakeries in New York, except it is scaled down to workable amounts of ingredients since in the bakeries they would start with 60lbs. Of cream cheese, a bit much for home use.i am also going to use a crumb crust for the bottom since in the bakeries they would slice layers out of 10" and 6" cakes for the bottom.

25- chocolate wafer cookies crushed
3 tbsp sugar
3 - tbsp melted butter
Combine above ingredients and smooth out on bottom of a 9" spring form pan.

5-8oz. Packages cream cheese softened
1 - cup sugar
3 - tbsp flour
1- vanilla
1 - cup sour cream
3- eggs
Combine all ingredients until smooth and pour into spring foam pan.
Bake at 350° 1hr.5mins. To 1hr.10mins. Till center is firm.
Let cool before removing from pan.refrigerate at least 4hrs, better overnight.....enjoy

P.S. You can melt 8oz.packages Semi-sweet chocolate and swirl into cake before baking if you want to make a marble cheesecake or if you want a chocolate cheesecake mix chocolate in completely in the begining.

Pat mentioned Junior's in an earlier post,but the funny thing is since they are in Brooklyn my father in law may have taught them how to make cheesecake before they opened as they use his recipe.the different part is making the cake bottom as their method is for mass production.
