Latta Plantation circa 1800s is located in North Carolina. This recipe is from Jane Latta and handed down in the family.
Gingercakes
2 cups Molasses
1 cup sugar
1 cup lard
1 cup milk
1 teaspoon ginger
2 teaspoons soda
4 eggs
2 pints flour
Beat sugar and shortening, add eggs and molasses. Sift other dry ingredients and add to batter alternately with milk.
Bake in two or three 9 x 13 inch pans at 350 degrees for 30 to 45 minutes.

The Plantation is having Candlelight Christmas on December 6. Besides holiday decorations of the era, they will have cooking in the kitchen. These gingercakes were served during Civil War years.
