Authentic Cold Oven Pound Cake

Cold Oven Pound Cake (Public domain)

Ingredients
  • 1 cup unsalted butter, softened
  • 3 cups sugar
  • 6 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • ¾ cup heavy whipping cream, room temperature
Instructions
  1. Spray baking pan with cooking spray.
  2. In a large bowl, beat butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla extract.
  3. In another large bowl, whisk together flour and salt. Gradually add flour mixture to butter mixture alternately with cream, beginning and ending with flour mixture, beating just until combined after each addition. Spread batter into prepared pan, and place in cold oven.
  4. Set oven to 325° and bake about 75 minutes. Let cool in pan for 20 minutes. Remove from pan and let cool completely.

I'm going to suggest one of the secrets to using old recipes is making sure the butter and eggs are at room temperature - remember there was no refrigeration, at least if the recipe is really old. I have a cookie recipe my mother-in-law had handed down to her and the temperature of the eggs and butter absolutely makes a big difference in how the cookies turn out. Maybe a chemist could explain why?
