Always enjoy cabbage. Just found this old Kentucky recipe for cabbage souffle. Sounds like a winner to me.

Cut a medium sized cabbage in quarters, put on in cold water, let boil 15 minutes. Drain, cover with hot water and cook until tender. Drain dry, chop fine, season with salt, pepper and butter. Beat two eggs until light, add four teaspoons of cream, put into a greased baking dish, sprinkle top with bread crumbs and bake.
