Browned Sweet Potatoes

They sure are messing with sweet potatoes anymore! Trying to tell me yams are sweet potatoes, too. This is a great recipe - I've made stuffed sweet potatoes before!
 
Browned Sweet Potatoes

Cut cold boiled sweet potatoes in lengthwise slices, sprinkle with salt and pepper. Brush with butter and sprinkle with brown sugar. Brown in hot oven.

hmmm, I have never boiled Sweet Potatoes. I bake them in the oven with skins on. Might try it this summer to keep from heating up my kitchen.

When I was a kid we ate canned sweet potatoes. Now I only keep them on hand for Sweet Potato Pie.
 
Another recipe for Sweet Potatoes fro "Old Time Recipes To Enjoy". Theses are called "Sweet Potatoes, Southern Style".

Bake sweet potatoes until thoroughly done. Remove from oven and cut in halves lengthwise; remove potato from skins carefully, so as to keep skins in condition to refill. Mash potatoes, adding sufficient melted butter and cream to moisten. The potato mixture should be the consistency of mashed potatoes when put back in shells. Season with salt, pepper, and very little sherry. Refill skins, brush tops with butter and brown five minutes in a hot oven.
