Basting Sauces For The Turkey

All turkeys need to be basted as they cook. Here are a few recipes for basting.

Applejack Basting Sauce ( Colonial New England for Wild Turkey)

2 cups apple cider
2 ounces applejack
1/2 cup butter
1/4 teaspoon tarragon

Mix everything in a saucepan of suitable size. Bring to a boil, reduce heat and simmer for 5 minutes. Use warm as a basting sauce for grilled or broiled turkey.
 
Lemon Butter Basting Sauce

1/2 cup butter
juice of 4 lemons
1 tablespoon Liquid Smoke
1 tablespoon white-wine Worcestershire sauce
1/2 tablespoon salt.

Melt the butter in a saucepan. Stir in the other ingredients. Mix well but do not boil. Use to baste broiled or grilled turkey breast meat.

Outstanding, Donna...especially the first recipe. Now, don't get me wrong, I've got nothing against the second recipe, either, except I think a lot of folks get carried away with liquid smoke. I'd rather throw some green hickory chips on my grill fire.

I DO love a charcoal grilled turkey breast. Your recipes sound like the perfect compliment to me. Wow!
