A Winter Tea

Some random thoughts.

Tonight while sitting in front of a raging fire with your mug of tea, how about some oatmeal raisin apple cinnamon cookies.

Some enjoy the simplicity and elegance of the Japanese tea ceremony. I highly recommend.



If you find yourself in midtown Manhattan, perhaps you should stop by the Russian Tea Room. There is also one in Chicago.

Every year for Christmas my Dad had to have a tin of Walker's Shortbread cookies. They made them in shape of Scottish Terriers too. I would get them. We had Scotties for years. We would always tell Mac, our Scottish Terrier they were made in his honor. Wonderful memories of years ago.
 
It's dreary and grey outside today at my house. Some hot tea would be splendid. Maybe a little extra honey in mine today. Still recovering from the ick.
 
I'm not a coffee drinker, but I LOVE tea!! I must be British at heart. Anyway, I thought I knew good tea until I went on a Missionary trip to India in 2014, and had a their version of tea, heavy on the cream and sugar. It was India tea, it was STRONG, and it was GOOD....
 
Flavored Teas:

Teas flavored with herbs and spices make unusual and refreshing beverages. Simply mix the tea leaves with dried herbs and spices (use about 1 teaspoon for each tablespoon tea leaves).

Here are some good combinations:

With dark smoky teas, such as Lapsang souchong add mint, bergamot or chamomile.

With black teas, such as Darjeeling or orange pekoe add dried orange peel, broken cinnamon sticks or cloves.

With oolong teas add anise seeds, thyme or sage.

With green teas add rose petals or sassafras.
 
Another tea recipe for these cold days.

New England Special

1 orange
12 whole cloves
1 cinnamon stick, broken into pieces
4 tea bags
4 cups boiling water
1 cup cranberry juice
1/3 to 1/2 cup sugar
1 1/2 to 2 teaspoons rum flavoring

Stud orange with cloves and cut into 6 or 8 sections. Drop sections into teapot, squeezing each section slightly. Add cinnamon, tea, and boiling water. Steep for 5 minutes and strain.
Stir in cranberry juice, sugar and rum flavoring.

Makes 4 to 6 servings.
 
Hot Tea Punch to serve about 14 for your Winter Tea a

2 quarts tea
1 can (6 ounces) frozen lemonade concentrate thawed
1/4 cup honey
1/2 cup granulated sugar
2 cinnamon sticks

In a 3 quart saucepan combine tea with lemonade concentrate, honey and sugar. Add cinnamon sticks and simmer 10 minutes.

Serve in mugs or teacups.
 
Donna. Thanks for sharing the different tea recipes and the interesting information. I prefer a nice hot cup of tea with a teaspoon of local honey and sometimes if I am feeling a little under the weather I would also add a splash of lemon with the honey for my tea. My sister and I have at least two to three cups of hot tea each night. I particularly enjoy the hot tea served in Chinese restaurants. It is absolutely delicious. David.
 
With Hot Tea month winding down, thought add this delicious hot tea, Hot Spiced Pineapple Tea.

1 can (46 oz.) Dole pineapple juice
1/4 cup honey
2 cinnamon sticks, broken
2 peppermint tea or mint medley herb tea bags

Combine pineapple juice, honey and cinnamon in large saucepan. Bring to boil for 1 minute. Add tea bags, steep 2 to 5 minutes. Discard tea bags.

Makes 6 servings.
