Spiced fruits were always popular as a dessert. Two favorites were Spiced Peaches and Spiced Cantaloupes.
Spiced Peaches
3 pounds peaches
3 pounds sugar ( 4 cups )
1 pint vinegar
1 cup water
2 ounces stick cinnamon
1 ounce whole cloves
1/2 ounce whole ginger
Blanch firm peaches in boiling water for one minute. Chill then drain and peel. Cool in syrup. Add sugar and cook until tender. Let stand for a day. Drain off syrup and reheat. Pack in warm jars.
Spiced Cantaloupes
3 lbs cantaloupe
1/2 tsp. alum
3 qts. water
3 cups sugar
1 pt. vinegar
2 sticks cinnamon
1/2 tsp. cloves
1 tsp. allspice
Pare the cantaloupe, remove seeds and cut into strips. Dissolve the alum in water and bring to a boil. Add the cantaloupe and cook 15 minutes, then drain. Combine vinegar, spices, and sugar. Add cantaloupe and simmer slowly. It takes about 45 minutes. Place in hot sterilized jars and seal.
