Many are not too fond of turnips. My husband enjoys them. This old recipe is a family one.

Turnip Soup


Take two ponds of peeled turnips, cut into small squares, place in a stew pan with four tablespoons of butter, stit them over a quick fire, add a pinch of salt, one tablespoon of flour, three pints of stock, then simmer gently for one and one half hour, passing whole through a sieve. Put back in the stew pan and add a little seasoning. Bring to a boil, adding a cup of good cream just before serving.
