Trappers' Fruit

Trappers' Fruit got its name because it was easy for fur trappers to prepare in the mid-19th century. It is a great accompaniment to serve with roasted or broiled meats.

Ingredients: (makes about 5 fruit cups)
3 cups (about 12 ounces) coarsely chopped dried apples
1 cup canned pureed pumpkin
1/2 cup dark brown sugar
1/2 cup roasted sunflower seeds
1/2 cup seedless raisins
1/4 teaspoon coriander seeds
1 teaspoon salt
1 quart water

Directions:
Combine all the ingredients in a heavy 3 to 4 quart casserole dish and mix well. Bring to a boil over high heat, reduce the heat to low, cover tightly and simmer for about 1 1/2 hours, or until the apples are tender. Check occasionally and if the fruit seems dry, add more water 1/4 cup at a time. Transfer the fruit to a serving bowl and cool to room temperature before serving.
