One of the members stated after reading thread on Cardamom Seed that she would have to look for recipes using this spice.

Thought I would start thread with Cardamom in the recipe.

Spicy Banana Nut Bread

1/3 cup shortening
2/3 cup sugar
2 eggs
1 teaspoon pure Vanilla Extract
1 3/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon Cardamom
1/8 teaspoon of Mace
1 cup mashed bananas
1/2 cup chopped nuts

Cream shortening and sugar until light and fluffy. Add eggs and vanilla and beat well. Sift flour, measure and sift again with baking powder, salt, cinnamon, cardamom, and mace. Add alternately with bananas to creamed mixture. Stir in nuts. Grease bottom of 9 1/2 x 5 1/4 x 2 1/4 inch loaf pan. Pour batter into pan. Bake in 350 degrees oven 1 hour to 1 hour and 10 minutes. Serve warm or cold at any meal. This is especially good with fruit salads, spread with butter or cream cheese for sandwiches.

This makes 1 loaf.

Spicy Peach Butter

26 medium sized peaches
2 cups sugar
1 1/2 teaspoon Lemon Peel
1/2 teaspoon Cinnamon
1/4 teaspoon Cardamom

Peel and slice peaches. Cook in small amount of water until peaches are soft. Mash and strain. Measure 4 cups pulp and combine with remaining ingredients. Cook until mixture thickens, about 45 minutes, stirring often. Fill hot sterilized jars, leaving 1/4 inch head space. Seal at once. Makes 2 pints.

Browned Butter Cardamom Cookies from Land O' Lakes

1 cup Land O Lakes Butter
3/4 cup sugar
1 egg yolk
1 tablespoon vanilla
1/2 teaspoon ground cardamom
2 cups all purpose flour
1 cup powdered sugar

Melt butter in 2 quart saucepan over medium heat. Continue cooking, stirring constantly and watching closely for 3 to 5 minutes or until butter starts to turn golden brown. Butter will get foamy and bubble. Immediately remove from heat. Pour into bowl and refrigerate 30 minutes or until cooled.

Heat oven to 350 degrees.

Combine cooled browned butter and sugar in bowl, beat at medium speed until well mixed. Add egg yolk, vanilla and cardamom, continue beating until well mixed. Beat at low speed gradually adding flour, until mixture is no longer crumbly and forms dough.

Shape dough into 1 inch balls. Place 1 inch a part onto greased cookie sheets. bake 10 to 12 minutes or until cookies puff and start to turn light golden brown. Cookies will have cracks in them.

Immediately remove from cookie sheets. Cool 1 minute. Roll cookies in powdered sugar while warm and again when completely cooled. Store between sheets of waxed paper in loosely covered container.

Makes 48 cookies.

Cardamom is a strong spice and only a little is needed for flavor. If you love the taste you can increase the amount of cardamom to 3/4 teaspoon or mix 1/2 teaspoon ground cardamom with the powdered sugar.

A wonderful cookie to serve with tea for tea party in the afternoon.
 
In Victorian England, Cardamom was much liked by chefs for the upper class. It was from India and used in Indian Curries. Queen Victoria loved everything Indian. They even had an India room in the palace.

Cardamom Coffee became popular.

Recipe for Cardamom Coffee.

ground coffee beans
1 cardamom pod (cracked) per cup of coffee
salt
milk
sugar

In an espresso coffee maker or French press, brew coffee as usual, adding a cracked cardamom pod and pinch of salt per cup to the ground coffee brewing. Add milk and sugar to your taste.
 
Cardamom Spiced Nuts for the Holidays

1/4 cup butter
3 cups mixed nuts, pecan, salted cashews and salted peanuts
1/2 cup sugar
3 tablespoons sugar
1 teaspoon ground cardamom

Melt the butter in a large skillet, then stir in the nuts and 1/2 cup sugar. Cook over medium heat, stirring occasionally, until sugar is melted and nuts are browned and caramelized. (8 to 12 minutes).

Meanwhile combine 3 tablespoons sugar and cardamom in large bowl. Stir in hot caramelized nuts. Toss to coat. Spread on waxed paper and cool completely. Break into clusters. Store in tightly covered container.
