Authentic Cayenne Sauce

There is always question about hot sauce and when first appeared in U.S. The first documented commercial hot sauce appeared in Massachusetts in 1807. It was sold as cayenne sauce. It was a vinegar based sauce. It predates Tabasco by 60 years.

The sauce was primarily made of aged cayenne peppers, vinegar and salt. While earlier forms of pepper sauces existed, the cayenne sauce is considered the first.

Home made cayenne sauce recipe:

cayenne pepper 1/2 lb
1 cup white vinegar
4 garlic cloves
1 teaspoon of salt.
Simmer and strain.

They needed some for oysters!!😆
 
I like any hot sauce; however, I'm selective about what I "put it on".

But to each his own. :smoke:

I have a buddy that uses half a bottle of tabasco on scrambled eggs.
Not something I would do ... but if he likes it, more power to him.
Ok there are some things that I don't put it on. Had a friend who would put a small bottle of Tabasco in a bag of pork skins and shook it up.

I have about 25 different kinds of Hot Sauce in my cabinet and I even ferment my own!
I also agree that I am selective about which kinds of hot sauces I put on what foods. For me, I don't put it on everything, just foods that I consider appropriate for me.
I'll bet you have the good stuff,I'd like to have a dozen steamed oysters and your homemade hot sauce .
