Eating Mustrat for Lent was popular in Detroit long before the Civil War. In recent years fewer and fewer Detroit restaurants offer Muskrat during Lent. How about some Civil War Muskrat recipes?

Said to taste like mild rabbit but removing the scent glands is essential. Sometimes called marsh rabbit due to the flavor.
