Quince muffins

So, my neighbor has a couple of neglected quince trees. With their permission we harvest and puree the quince..the flavor is very pear like..mild..the dozen I made disappeared right quick!

Quince Muffins
! cup pureed quince
3/4 C granulated sugar. I experimented with Swerve..because it is no carb..turned out quite nice.
1/3 C veg oil
3 Tablespoons of milk
2 eggs
2 C flour
1tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon

Mix oil, sugar, egg, milk, and quince together. In a seperate bowl mix dry ingredients. When combined, hand mix with wet ingredients. Batter will be lumpy. Do not over mix, other wise you get hockey pucks..think mixing brownies..lumps are ok..place batter into paper cups in your muffin pan..trust me..too sticky for oiled pan...bake 350 for 25 mins. Muffins are very dense. Poke them with a toothpick. If it comes out clean they are done.
 
I used to have a quince tree in my back yard. It produced a high volume of of what is quite a large fruit.

I never got to eat a single one from that tree. Just before they ripened a flock of Sulpher-crested cockatoos would land in the tree. They would rip a quince from its stem or crack the branch near it and hold the quince in one of their claws. They did not eat the quince itself. They would bite chunks out of it and spit those pieces onto the ground. When they got to the seed inside the fruit they would throw the fruit away, crack open the seed and eat the kernel inside it.
Within two days they would strip the tree of all fruit.

Fortunately, the USA does not have Sulpher-crested cockatoos so I wish you well with your cooking as I understand quinces are a delightful addition to many sweet treats.
 
I had an elderly neighbor who would make quince syrup for medicinal purposes--but these muffins look to be a tastier way of getting the fruit into the body!
