Pineapple Rum Tartlets

Pineapple was beloved by our Victorian friends and is a natural complement to meals where ham is served. So Christmas comes to mind as a holiday where these Pineapple Rum Tartlets could grace your table. These treats are a bit time consuming to make so they’re well suited to holidays and celebrations where the goal is to impress your guests!

Pineapple Rum Tartlets

Ingredients for Pâte Sucrée:
2 ½ cups all-purpose flour plus extra for rolling
3 Tbsp sugar
1 cup salted butter very cold
2 large egg yolks
1 Tbsp vanilla extract

Ingredients for Pineapple Filling:
One pineapple cut into quarter slices
3/4 cup gold or black rum
3/4 cup dark brown sugar
1 vanilla bean sliced lengthwise
1 Tbsp salted butter

Ingredients for Pastry Cream:
3 large egg yolks
6 Tbsp brown sugar
2 Tbsp cornstarch
1/2 cup heavy cream
1/2 cup whole milk
2 Tbsp reserved pineapple syrup
1 Tbsp salted butter

Ingredients for Garnish:
Cherries
Whipped cream
Powdered sugar

Ellie. I do believe you have yet another award winning masterpiece. Unfortunately, I do not like heated or cooked pineapple, however, I do like it very much chilled and served with either cottage cheese or Philadelphia cream cheese. Mother would often serve pineapple cooked along with a ham. On the other hand, could I make this dessert with bananas or peaches in place of the pineapple? Thanks for sharing this delicious looking recipe with all of us foodies. David.
