Pineapple was beloved by our Victorian friends and is a natural complement to meals where ham is served. So Christmas comes to mind as a holiday where these Pineapple Rum Tartlets could grace your table. These treats are a bit time consuming to make so they're well suited to holidays and celebrations where the goal is to impress your guests!

Ellie. I do believe you have yet another award winning masterpiece. Unfortunately, I do not like heated or cooked pineapple, however, I do like it very much chilled and served with either cottage cheese or Philadelphia cream cheese. Mother would often serve pineapple cooked along with a ham. On the other hand, could I make this dessert with bananas or peaches in place of the pineapple? Thanks for sharing this delicious looking recipe with all of us foodies. David.
