Pickled Spinach

It seems they have pickled everything from meat and fish to vegetables and fruits.

Pickled Spinach

2 cups cut up raw spinach
1/4 cup chopped, cooked bacon
1 cup chopped tomato
1/4 cup cider vinegar
1/2 cup salad oil
1/4 cup chopped green pepper


mix and let stand in the ice box for fifteen minutes. Serve on lettuce leaves.

This sounds good as love spinach.
 
Spinach is soooo very good and grows fast - usually have a lot of it. Salads and sandwiches is how we eat it mostly, or quickly steamed. Soups and stir fry. No end to this versatile little guy - today, as a matter of fact, the son has been in the kitchen making, yes, a spinach omelet! Spinach, Parmesan cheese, just a bit of nutmeg.

And... I do dearly love the old Popeye cartoons! Just wish spinach would do that for me... :laugh:
