This recipe for Pepper Hash from "Old Timey Recipes" . It says it from a 1885 cookbook.

Wash, remove seeds, and chop 1 dozen sweet red peppers, 1 dozen sweet green peppers, 1 dozen small green onions. Add 3 teaspoons salt and cook slowly for 30 minutes. Drain and add 4 cups mild vinegar and 1 cup brown sugar. Bring to boiling point, put in sterile jars and seal.
