One Egg Butter Cake made into Coffee Cake

A one egg butter cake is easy to make. It can be made into a quick coffee cake too.

This recipe from "The Household Searchlight Recipe book". These are recipes from readers of the Household Searchlight magazine. This was popular in early 1920s.

One egg butter cake

2/3 cup sugar
1/4 cup shortening
1/4 teaspoon salt
1 teaspoon vanilla flavoring
1 egg
1 1/2 cups flour
1/2 cup milk
2 teaspoons baking powder

Cream shortening and sugar. Add unbeaten egg. Add flavoring. Beat thoroughly. Sift flour, measure and sift with salt and baking powder. Add alternately with milk to creamed shortening and sugar. Pour into well oiled pan. Bake in moderate oven for 35 minutes.

To make quick coffee cake:

Prepare one egg cake batter. Add 1 tablespoon grated lemon rind. Pour into well oiled loaf pan. Sprinkle generously with sugar and cinnamon. Bake in moderate oven about 35 minutes.

Tip Moderate oven is 375 degrees.
