Maple Syrup Pudding

Maple Syrup Pudding is an old New England dessert. It would be good today. We have ice and snow.

1 cup flour
1/2 teaspoon salt
1 1/2 teaspoon baking powder
1/4 cup brown sugar
1/2 cup milk
1 teaspoon vanilla
1/4 cup melted butter.

Mix all ingredients together. Place in 1 quart baking dish. Sprinkle in raisins or chopped nuts. In a saucepan bring 3/4 cups maple syrup and 1/2 cup water to a boil. Pour this over the batter. Bake in oven at 350 degrees for 35 to 40 minutes.

Serve this dessert warm with cream.

Made both versions this week. Most of us thought the nut version was excellent even without cream, but the raisin a mite too sweet (hubby is of the opinion that there's no such thing as 'too sweet'). I should try the last piece of raisin with cream, perhaps.
