I have always loved Macaroons. This is old recipe from "Taste of Boone County".

Macaroons

2 egg whites
3/4 cup sugar
1 teaspoon vanilla
1/2 cup coconut
2 cups corn flakes

Beat egg whites until stiff, adding sugar a little at a time as you beat the whites. Stir in rest of the ingredients.

Drop by teaspoonful on the baking sheet. Bake at 350 degrees for 10 minutes or until light brown.

This is a different recipe with using corn flakes.
 
Haven't had some macaroons in a while. Have this old recipe from my Granny's church.(Cookbook South Elkhorn Christian Church).

Pecan Macaroons

1 cup brown sugar
1 cup plus 2 tablespoons white sugar
4 egg whites, do not beat
1/2 teaspoon salt
1/2 cup unsifted flour
2 teaspoons vanilla
4 cups chopped pecans

Combine egg whites, sugars and salt in top of double boiler. Heat and stir until syrupy. Add nuts, flour and flavoring and stir well. Drop by teaspoonful on greased cookie sheet. Bake about 12 minutes in a preheated 400 degree oven. Yield 35 to 40 cookies.

That is different,I never heard of a macaroon like this.will show this to the Mrs. And get her take on it.I think she might gives this one a try.

The recipe has spiked my wife's interest.she is going to make these for the girls she volunteers with.one question is the do you know if she used dark or light brown sugar?
 
I have to say I love Almond Macaroons....and I do like the coconut, but Almond is my favorite. You cannot find them anywhere, so making them will make me a happy woman. :) thanks for the post....
 
Oatmeal Macaroons

1 cup margarine
1 cup white sugar
1 cup brown sugar
2 eggs
1/2 teaspoon vanilla
1 cup pecans, chopped. You can use walnuts.
1/2 cup raisins
1 1/4 cups sifted flour
1 teaspoon soda
1/2 teaspoon salt.
3 cups rolled oats
pecan halves
1 cup grated coconut

Preheat oven to 350 degrees. Cream margarine and sugars. Add beaten eggs and vanilla. Mix raisins and flour, soda, salt, coconut and rolled oats. Add gradually to sugar mix. Add chopped nuts. Roll by teaspoonfuls onto cookie sheet. pressing a pecan half in middle of each cookie. Bake at 350 degrees for 18 minutes. These are crisp when fresh.

If you want them soft, age 2 to 3 weeks in a tightly sealed container.
