Irish Stew with Dumplings

For St. Patrick's Day, how about some Irish Stew with Dumplings. This is recipe my Granny would make.



2 pounds lamb or mutton
boiling water
1 cup raw carrots
1/2 cup dices raw turnip
1 medium sized onion, sliced
1 teaspoon salt
1/4 teaspoon pepper
1/2 bay leaf
1/2 recipe Baking Powder Biscuits

Choose meat from shank, neck, shoulder, breast or flank. Wipe with damp cloth and cut in small pieces. Cover with boiling water and simmer, covered for 2 hours. Add vegetables and seasonings and cook 1/2 hour longer. Drop biscuits by spoonfuls on top of mixture; cover tightly and cook 15 minutes. Serve at once.

Baking Powder Biscuits Recipe:
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup shortening
1/4 cup milk

Mix and shift ingredients; cut in shortening until well mixed and add milk, stirring quickly until a soft but not sticky dough is formed. Drop half of mixture on top of Irish Stew. Keep other half to make biscuits.

If you make biscuits, turn out mixture on floured board and knead and smooth into ball. Roll out and cut with floured biscuit cutter. Bake at 450 degrees for 12 to 15 minutes. Never waste your biscuit mixture. These are so good with butter and honey.

Irish as they come, but stew was never on my favorite list. I'd much rather the American version of an Irish meal. That being a nice flat cut corned beef cooked very slowly with fresh cabbage and potatoes.

I do love bit of corned beef. One on my favourite traditional meals would be glazed bacon (cured pork loin similar to ham) boiled potatoes, green cabbage and some nice parsley sauce to pour over. It's top notch. I also love a bit of stew mainly beef stew or a Dublin coddle, I'd only have lamb on occasion.
