This pie is recipe from family of Belle Air Plantation, which was built around 1650 to 1670. It is East of Chales City Courthouse as one goes toward Williamsburg.
Belle Air Plantation Carmel Ginger Pie
2 large or 3 small eggs
1 cup light brown sugar
2 tablespoons melted butter
1 teaspoon vanilla or 2 teaspoons crème de cocoa
1 tablespoon cold water
pinch salt
3 tablespoons crystalized ginger, finely chopped
Preheat oven to 150 degrees. Have thin raw pie crust in 9 inch pie pan. Beat eggs. Add sugar, and beat again. Beat in the butter, vanilla, water and salt. Stir in ginger. Pour mixture into crust. Bake at 450 degrees for 10 minutes and let sit in oven for another 15 to 20 minutes until "set".
