Cherry Recipes for Washington's Birthday

Feb.22 is George Washington's Birthday. Just though be fun if many would post some recipes using cherries. I always remember the story of Washington and the Cherry Tree.

I will start off with my Aunt's recipe for Cherry Salad.

2 cups cherries, pitted
1/2 cup almonds, blanched
French Fruit dressing
lettuce leaves

Pit your favorite variety of ripe cherries. Shred almonds, mix with cherries, moisten with French fruit dressing and serve on lettuce leaves.

To make French Fruit Dressing:

2/3 cups oil
2 tablespoons plus 2 teaspoons apple cider vinegar
2 tablespoons plus 2 teaspoons lemon juice
2/3 teaspoon salt
1/3 teaspoon dry mustard
1/3 teaspoon paprika
4 tablespoons confectioner's sugar

Mix all ingredients together well. Cover lightly and refrigerate. Shake or stir before serving on your favorite fruit dish.
 
Back when my children were young, I always made a sour cherry pie with a hatchet design pricked on the upper crust with a fork. Always on Feb. 22, regardless of when the legal holiday was.
