Since we had all the pictures of cowboys, thought I would post this recipe. This dish, Cattle King Potatoes was always served by one of California's early cattle kings. The recipe is in cookbook, "West Coast Cook Book".
Cattle King Potatoes
3 pounds potatoes
1 clove garlic
1/4 to 1/3 cup butter
2 egg yolks
1/2 cup cream
salt and pepper
1/2 pound mushrooms
1/4 cup minced parsley
Pell 3 pounds of potatoes and boil them tender with salt and a clove of garlic in the water. Mash them well with 1/4 to 1/3 cup of butter, depending on how expansive you feel. Add 2 beaten egg yolks, 1/2 cup of cream, salt and pepper to taste, 1/2 pound of sliced sautéed mushrooms and 1/2 cup of minced parsley. Pile in a baking dish and bake until brown.
