Authentic Cardamon Cake

Cardamon Cake was a popular cake during Fall in 19th Century. This recipe is from collection of recipes of Louisa Macculloch (1785-1863). Have posted several of her recipes.

Cardamon is a spice made from combing and grinding several types of seeds from the ginger family. It is considered to be one of the world's oldest spices. The Egyptians were even known to have used it to prevent tooth decay. It is an expensive spice. One acre of cardamom produces about 50 to 150 pounds of the spice.

Cardamon Cake

1 lb flour ( about 3 1/3 cups)
1 lb sugar (about 2 1/4 cups)
3 oz butter
3 eggs
Ginger, cinnamon and cardamon

Mix the flour and sugar together then soften the butter and mix it in together with eggs in the flour and sugar. Add the spices. Knead the whole and then roll it out thin and cut it into square cakes.
Cook at moderate heat (350 degrees) Bake 15 to 17 minutes. Makes about 2 1/2 dozen.

Wonderful with a cup of coffee. Enjoy!
 
Cardamon is so frequent in Norwegian deserts. I guess Scandinavians have lower dental bills than many! Like

That recipe looks good--but my kitchen is so small that rolling dough out isn't feasible. I'll have to fool around with the recipe!
