October 3rd is supposedly caramel pudding day. This custard is very close to a pudding.

Caramel Custard

4 cups milk
5 eggs, slightly beaten
1/2 teaspoon salt
1 teaspoon vanilla
1 cup sugar

Scald the milk. Melt sugar to a light brown syrup and add the scalded milk. Add the mixture to the eggs. Pour mixture into custard cups and place in pan of water and bake in oven until firm.

This is a tasty treat
