Bourbon Cake

Bourbon Cake is another delicious dessert to make for your Derby Party. This recipe is recreated from old one my aunt had.

2 teaspoons nutmeg
1/2 cup bourbon
1 1/2 cup flour, divided
1 cup raisins, chopped
2 cups pecans
1/2 cup butter
1 cup sugar
3 eggs, separated
1 teaspoon baking powder
1/2 teaspoon salt

Preheat oven to 325 degrees. Grease a 10 inch tube pan. Soak nutmeg in the bourbon. Mix 1/2 cup flour with the nuts and raisins. Cream butter and sugar until light. Add egg yolks, one at a time, beating well. Beat in remaining flour, baking powder and salt. Beat in bourbon-nutmeg mixture. Add the nuts and raisins. Beat the egg whites until stiff. Fold in and spoon batter into pan. Allow to stand 10 minutes. Bake at 325 degrees for 1 1/4 hours.

Cool in the pan, 1 to 2 hours before turning out.

This similar to fruit cakes, but one a little different. It be good for Derby time.
 
Sounds good to me and I see it has plenty of bourbon in it :wink: It sounds a little lighter in texture than traditional fruit cake.

I learned a good baking tip recently when added moist ingredients like raisins and other fruit like cherries, they should be lightly coated in flour to prevent them from sinking all to the bottom of the cake.

That's an excellent tip Anna.sounds like a good cake for this saturday.
