I think it wouldn't be too difficult to recreate. You'd still boil the rice in milk. I'd peel and core the apples and maybe use ground clove, cinnamon and brown sugar and push it into the center. I think you could even finely chop pecans to put into the center if the apple's core was large enough. I believe in order to get the rice to hold fast to the apples you might want to quickly brush it with a little water and then roll the rice onto the apples. Cheesecloth should work nicely to boil the apples in. I'd sprinkle it with cinnamon before serving just to make it look pretty and little more flavorful. You could also drizzle caramel sauce on them, too.
