A wonderful coffee cake for Fall is this one from my late aunt. It is great to have for breakfast or mid morning snack with coffee and friends. It is old recipe she adapted.

Apple Coffee Cake

2 cups apples, chopped
1 tablespoon cinnamon
1 cup sugar
1 teaspoon salt
1 teaspoon vanilla
1/2 cup chopped pecans
1 tablespoon sugar
1 1/2 cup sifted flour
3/4 cup vegetable oil
1 teaspoon soda
1 egg

Mix the tablespoon sugar and cinnamon. Sprinkle over apples and set aside. Mix the remaining ingredients. Add apples. Bake in a greased cake pan or iron skillet. She always used an iron skillet. Bake at 350 degrees for 45 minutes.

That looks good and I believe even I could make it (I'm not a baker). I haven't had an iron skillet for at least thirty years so will have to go with a cake pan; got that. Hey, and I've got some real Georgia pecans just now too; might be just the thing.

thank you it sounds wonderful how about in the future putting a picture of the cake dessert dish whatever it is someone like me who loves food would enjoy seeing it done.

Another version of coffee cake that is from friends of my late Aunt.

Ingredients:

1/2 cup butter
a little lard
1 cup sugar
2 eggs
1 and 1/4 cups milk
3/4 cup raisins
3 cups flour
2 teaspoons baking powder
vanilla
pinch of nutmeg

Mix all ingredients together. Pour in pan. Bake in moderate oven.

For topping:
heaping tablespoon of butter
3/4 cup sugar
3/4 cup flour
one teaspoon of cinnamon.

Work ingredients between fingers and sprinkle over the cake

I love a good coffee cake. I am learning how, and when to substitute sugar alternates in my baking.
