AMISH CORN CAKES

Being that those of us who live in the south eat alot of corn bread and use corn meal it is only fitting that my wife got this recipe years ago in Lancaster, Pa..I would also be willing to bet that Diane could tell us the native Americans have one like this.
1 - cup corn kernels (fresh or frozen)
1/2 cup yellow corn meal
1- cup boiling water
2-tsp. Honey
1 - tsp salt
2 - egg whites cooking spray
Cook corn, covered in boiling water to cover until tender.drain and set aside to cool.
Combine corn, cornmeal, boiling water, honey, and salt in med. Bowl and stir well.Beat egg whites until stiff peaks form, gently fold into corn mixture.
Pour 1/4 cups of batter onto hot griddle coated with cooking spray.cook 3 minutes on each side.
Should make about 12- 3 inch cakes.
top with whatever you like ie:maple syrup, honey, and even cinnamon sugar.another frugal Amish meal.
