White Zinfandel Cake

Since today is National Wine Day, I thought I'd share this recipe for a cake made with White Zinfandel wine. This cake is best when served with a healthy dollop of whipped cream and fresh strawberries or a scoop of vanilla ice cream. A touch of port wine on top of the ice cream is great too.

Ingredients:

1/2 bottle White Zinfandel
1/2 cup cocoa powder
1/2 cup unsalted butter
1 cup sugar
2 eggs
2 teaspoons real vanilla extract
2 1/4 cups all purpose flour
1/2 teaspoon salt
3/4 teaspoon baking powder
1 teaspoon baking soda

Directions:

In a heavy bottomed saucepan, bring the wine to a boil, reduce to a low simmer and reduce it to measure 1 cup.

Whisk in the cocoa powder and set aside to cool.

Preheat oven to 350 degrees. Lightly butter a 9 inch square cake pan and set aside.

Cream the softened butter and sugar together until light and fluffy, adding the eggs and vanilla and beating well.

In another bowl, whisk together the dry ingredients to blend thoroughly. Turn the beater down to low speed and blend in the cooled cocoa mixture alternately with the flour mixture. Blend well.

Pour into the prepared pan to about 3/4 full. Bake 25-30 minutes or until top springs back when touched lightly. Serve cool.

This sounds pretty good, but unsure of the wine. I am not big on wine, and I don't like communion wine any better. I suppose that I can make an exception for cake. Thanks for the recipe @Eleanor Rose.
The alcohol burns off in the baking, just leaves a nice flavor..also communion wine is designed to be barely palatable, in order to keep the servers sober. Really.
