In Wales on March 1st, St. David's Day is celebrated. St. David is the patron saint of the Welsh people and in honor of his saint day people in Wales wear daffodils or leeks. Women dress in traditional Welsh costume and parades are held. Also traditional Welsh foods are served including Cawl, which is a lamb and vegetable soup.

This recreated recipe provided by the famous British chef Jamie Oliver was given to him by the five-time cawl-making world champion, so it's bound to be good.

Ingredients -
  • sea salt and freshly ground black pepper
  • 1 onion
  • 1 kg lamb neck fillet , bone in, cut into 5cm chunks (ask your butcher to do this for you)
  • 1 kg swede
  • 2 carrots
  • 2 Maris piper potatoes
  • 2 parsnips
  • 3 large leaks
