"The Christian Bed & Breakfast Cookbook" edited by Rebecca Germany was a gift from a friend, who knows I collect different cookbooks. It is the companion volume to the popular, "Christian Bed & Breakfast Directory". This cookbook includes the specialties of the house from bed and breakfast establishments across the United States and Canada.


There are some delectable dishes as "Haddock de Journee" and Spring Festival Salad" to such easy recipes as "Breakfast in a Cookie" and "Irish Soda Bread". This cookbook is unsurpassed in its variety of regional and traditional dishes. Each recipe features serving suggestions, garnishes, accompanying dishes, table presentation, and the history of most recipes.

This is another one of my prized cookbooks. When the best dishes of bed and breakfast inns grace your table, thanks, warmth and cheer are sure to follow you.

Breakfast in a Cookie makes one feel like a kid. It is a delicious treat for breakfast but also good for you. It is recipe from "The Manor at Taylor's Store B&B Country ", Smith Mountain Lake, Va.

Breakfast in a Cookie

1/2 cup canola oil
1/2 cup unsweetened applesauce
1/2 cup brown sugar
1/4 cup egg substitute
1 tablespoon vanilla extract
1 tablespoon orange juice
1 tablespoon lemon juice
1/2 cup oat bran
1/2 cup 7 grain cereal
1/2 cup all purpose flour
1/2 cup whole wheat pastry flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground cloves
3 cups old fashioned oats
1 cup golden raisins( also can add 1/4 cup unsweetened coconut and/or 1/2 cup chopped walnuts)

Preheat oven to 350 degrees. In a large mixing bowl, beat together with electric mixer oil, applesauce, and brown sugar. Add egg substitute, vanilla and juices. Then beat again. Sift together oat bran, 7 grain cereal, flours, baking soda, salt and spices. Mix these ingredients with the wet mixture. Stir in oats. Fold in raisins and other opinions. Place dough on ungreased cookie sheets by the tablespoonful. Bake 15 minutes or until golden brown. Remove cookies from the sheet immediately and cool. Makes 3 dozen cookies.

What a wonderful breakfast treat!
