Stewed Tomatoes and Okra

Today there are more varieties of tomatoes available in the store than ever before. Tomatoes are great cooked or raw and can be used in so many recipes.

Stewed Tomatoes and Okra

--4 slices diced bacon
--1 diced onion
--3 cups sliced okra
--1 (14.5-ounce) can diced tomatoes or freshly diced tomatoes
--Salt and freshly ground black pepper to taste

In a heavy bottomed pan over medium-high heat, add the bacon. Render the bacon until crisp. Remove from pan and reserve. Add the onion and saute until tender, about 3 minutes. Add the okra and tomatoes, making sure to add the reserved juice from the tomatoes to the pan. Season with salt and pepper and simmer for 15 minutes. If needed, add water or chicken stock if the pan becomes too dry.

There are many variations of this dish. Sometimes I will substitute andouille sausage for the bacon, add Cajun spices, shrimp and corn.
