Stewed Red Cabbage

Cabbage is good during winter months. This recipe is a good one with bacon and other vegetables.

2 1/2 lbs cabbage
2 medium onions
3 medium carrots
1/4 pound slab bacon
1 ounce butter
4 tart cooking apples
1 clove garlic
bay leaf
2 cloves
3/4 teaspoon grated nutmeg
salt and freshly ground pepper
2 tablespoons port
2 tablespoons red wine vinegar

Heat oven to 300 degrees. Chop the cabbage. Chop onions, carrots and bacon. Over low heat, melt the butter in dish and cook onions, carrots and bacon soft. Chop and add the apples and garlic. Add the cabbage and remaining ingredients., mixing well. Cover and bake for 2 1/2 to 3 hours. Serve hot.
