Some Refreshing Summertime Drinks

Thought start thread on some summer drinks. Will try to find authentic and add new ones.

Lemonade is always popular in the summer. This is a recipes from Food Section of last Wednesday's newspaper.

"Rocking Chair Lemonade"

1 cup warm tap water
1 cup sugar
1 cup freshly squeezed lemon juice ( about 6 lemons )
3 cups cold water
1 lemon. thinly sliced
fresh mint leaves

In a small, heavy bottomed saucepan over low heat, stir together the warm water and sugar. Bring it to a simmer, stirring, until the sugar has dissolved. Increase the heat to medium and bring to a boil. Cook for 2 minutes, then set aside off the heat to cool.

Once the syrup is cool, pour into a 2 quart pitcher. Add the lemon juice and cold water., then stir well. Garnish with lemon slices and fresh mint. Serve over ice.
 
To make strawberry lemonade, puree 2 cups of cleaned and hulled fresh strawberries in a juicer or blender. If using a blender, press the puree through a mesh strainer to remove any large pieces of pulp. Add the strawberry puree to the lemonade recipe in above post, but reduce the cold water to 2 cups.

There is nothing like strawberry lemonade for a hot day.
 
Coffee was always a favorite during the 19th century. Imagine if they could make an Orange Coffee shake.

1/4 cup strong coffee or espresso
1/4 cup fresh squeezed orange juice
2 large scoops coffee ice cream
large dash of cinnamon
large dash of nutmeg

Put all ingredients in blender. Cover and blend at high speed until thick, adding more ice cream if necessary. Pour into tall glass, sprinkle nutmeg on top, and serve If desired add an orange slice to lip of glass.

To make strawberry lemonade, puree 2 cups of cleaned and hulled fresh strawberries in a juicer or blender. If using a blender, press the puree through a mesh strainer to remove any large pieces of pulp. Add the strawberry puree to the lemonade recipe in above post, but reduce the cold water to 2 cups.

There is nothing like strawberry lemonade for a hot day.
May have to try that one. Will have to add one more ingredient though. Thanks for sharing.
 
Raspberry Shrub, authentic

From: "The Frugal Housewife", by Lydia Maria Child, 1830.

"Raspberry shrub mixed with water is a pure delicious drink for summer; and good in a country where raspberries are abundant. It is a good economy to make it answer instead of Port and Catalonia wine. Put raspberries in a pan and scarcely cover them with strong vinegar. Let sit to draw out the juice for 24 to 48 hours; strain. Add a pint of sugar to a part of strained juice. , (of this you can judge by first trying your pan to see how much it holds), scald it, skim it, and bottle it when cold."
 
Cooling Cinnamon Water

From: 'The House Servant's Directory" by Robert Roberts, 1827.

This is recreated version as original made enough for 128 servings.

1 quart water
3 whole cloves
1/2 ounce cinnamon sticks

Boil the water, and put in quart and 1/2 jar, then add the ingredients. Stop up the jar and store in cool place. When ready to serve, put in 1/2 cup of the cinnamon-clove water and a rounded 1/4 cup of sugar into 1 quart of water. Chill on ice before serving. Alternately, add spice water and sugar to 2 cups of water, and ice to make one quart.

Note: Each 1 cup of this concentrate makes 8, 1 cup servings diluted.
 
Another 19th Century Beverage was Sumac Lemonade

8 clusters rosy-red sumac heads
2 quarts cold water
sugar to taste

To make one pitcher, use six to eight clusters of rosy-red sumac heads. Empty the heads into a large container of water and mash them soundly with a beetie; or you nay lightly bruise the seed heads and let them soak in the water, now and again gently stirring. Strain the liquid through a muslin or several layers of cheesecloth, them add sugar to taste and you will end up with a drink that is very pleasant to the taste.

It is important to harvest the seed heads at the right time, just when the heads turn a nice rosy-red color. Any darker and the results will be slightly bitter. Always use cold water. Hot water will leach out the tannin. The natural tartness is due to ascorbic acid, vitamin C.

I used to make this when my kids were small, instead of Koolaid. I loved it, and it is very refreshing.

1-3 shots each, chase with water as needed.

Then, if you can stand, and just for this site, take two shots Southern Comfort, two shots Yukon Jack, combine, mix with ice, pour out 4 shots. Make sure phone is on, so family can find you as you will undoubtedly go outside.

We used to make Indian Kool Aide out of manzanita berries. Kool Aide because you dried them and powdered them. Then you let them sit a spell. It's an adult beverage - better than Kickapoo Joy Juice!

Found a delicious drink recipe to try. It is for a Mint Tea Float.

1 pint lemon sorbet
2 to 3 cups mint tea
1/2 pint fresh strawberries

Steep your tea. Let it come to room temperature or cool in refrigerator.
Clean, stem and quarter the strawberries.
Assemble the floats. Scoop the sorbet into glasses. Pour the tea over each scoop and garnish with strawberries. Add a spoon and serve right away.
Makes 4 portions.

  • 4 juicy limes (thin, smooth skins are juiciest)
  • 1/2 cup sweetened condensed milk
