Sally Lunn Bread
Who was Sally Lunn? Both armies had explanations for the name Sally Lunn. It may have been the name of a woman who sold the Sally Lunn bread in England. One folk tale says the name comes from the French culture. Some southerners say a French girl sold a special bread that was as golden as the sun. "Solei" is the French word for sun. The bottom of the bread was white as the moon. "Lune" is French for moon.
1 cup milk 1pk. dry yeast
1 stick butter 1/2 cup sugar
3 eggs 5 cups flour
pinch of salt 1 Tblsp butter
Pour milk into saucepan and cook over medium heat until milk just begins to boil. Then reduce heat and cool slightly. Add yeast and let stand for about 6 minutes. In a large mixing bowl, beat butter and sugar until mixture is light. Add eggs and beat well. In a separare bowl, combine flour and salt. Combine both mixtures. Dab 1 Tblsp butter in a large bowl. Place dough in bowl and cover with towel. Grease tube pan with 1 Tblsp butter. Use large spoon to put dough into tube pan. Cover tube pan with towel.
Let dough rise for about 2 hours until doubled in size.
Bake bread at 350 degrees for about an hour, or until top is golden brown. Remove from oven and let stand for 10 minutes. Remove from pan. Cut bread with bread knife and into slices and serve with jam, honey or butter.
See the jam recipe tomorrow for a great jam to go with the Sally Lunn bread.
