Pumpkins are out in our area already. I always love all things pumpkin. Here is a variation on corn pone which is a real treat.
Pumpkin Pone
Combine:
2 cups cornmeal
2 cups mashed cooked pumpkin
1 teaspoon salt
2 tablespoons butter
Mix well. Form into small pones and flatten slightly with fingers. Place on a greased griddle or baking sheet and bake for 30 minutes in a 425 degrees oven. Serve very hot with butter.
