History Pies and puddings

A modern version of Cracker Pudding which is from "Entertaining The Louisville Way", The Queens Daughters, Louisville, Kentucky.

8 square soda crackers, rolled fine
3 egg whites
1 cup sugar
1/2 cup cream of tartar
1 cup chopped pecans
1 teaspoon vanilla

Beat egg whites and cream of tartar until stiff. Add sugar slowly, stir in the crumbs and nuts. Add vanilla. Bake 30 minutes at 350 degrees in 12 x 6 pan. Cut into serving pieces and top with your favorite ice cream.

This cracker pudding is rich and delicious.
